Freeze-drying Process

Freeze-dried fruit: the power of fruit in every bite

Fruits are natural sources of vitamins, minerals, dietary fiber, and valuable bioactive compounds. But what if we want to enjoy them all year round, regardless of the season, while preserving as many of their natural properties as possible?

This is where freeze-drying comes in.

What is freeze-drying?

Freeze-drying is a modern drying method carried out at very low temperatures under special vacuum conditions. First, the fruit is frozen, and then, under vacuum conditions, the water is removed through a process called sublimation. This significantly reduces the fruit’s moisture content without the intense heat treatment used in other drying methods.

The result is a light and crisp product that retains much of the fruit’s natural color, aroma, and flavor, as well as many of its nutrients.

What does this mean in terms of nutrition?

Freeze-drying is of particular interest from a nutritional standpoint, as this gentle processing method can help preserve sensitive components of the fruit, such as vitamin C, as well as various polyphenols, flavonoids, anthocyanins, and carotenoids.

At the same time, because it is primarily the water that is removed, the fruit’s natural nutrients become more concentrated per gram. Thus, a small amount of freeze-dried fruit can correspond to a larger amount of the original fresh fruit. However, this does not mean that freeze-dried fruit is “more nutritious” than fresh fruit in every case. Its nutritional value depends on the fruit itself, the processing method, and the amount consumed.

And what does that mean for wellness?

Fruits are an important part of a balanced diet, providing dietary fiber, micronutrients, and a variety of natural bioactive compounds. Freeze-dried fruits offer a convenient way to incorporate the flavor and nutritional benefits of fruits into our daily lives.

They don’t need to be refrigerated before opening, are easy to transport, and can be added to yogurt, oats, and porridge, smoothies, bowls, pancakes, and desserts, or eaten as a snack.

And because the freeze-drying process itself does not require the addition of sugar, freeze-dried fruit can be a simple option for those who want to enjoy the natural flavor of fruit in a more practical way as part of their daily diet.

Fruit, but different.

Freeze-drying does not turn a piece of fruit into something “magical.” It simply uses technology to remove the water, helping to preserve, to a large extent, the characteristics and many of the valuable nutrients of the original fruit.

Lightweight, full of flavor, and packed with the fruit’s natural goodness.

A different way to enjoy fruit. Any season, any time.
